Today’s breakfast: scrambled eggs, asparagus, and tomatoes.  The white flecks are my favorite finishing salt.  They are a crispy white color, have a great light crunch, and an interesting pyramid shape.  I should try photographing them sometime.  White can be so hard to capture good and I would like the challenge.   Hope everyone has a great weekend!

I was going to try taking some more food photos today.  I got sidetracked.  Who could resist that serious face.  She was looking out the window telling me about the cat that walks through our yard and how cold it must be.   She was concerned enough that her little lips worked into a pout.  Love it!

The sun has been shinning in so bright in the mornings, but it is so chilly.  Still, though, I am thinking ahead to summer plans and garden needs.  I really want to be able to grow some green beans and tomatoes this year.  Meanwhile, this plant catches the light and I snap a couple photos.  It reminds me of plants growing in Florida…where it is warm and the sun is almost always shinning.

It got very cold here again.  Oatmeal and tea in the morning are almost necessary to get you warm and ready to start the day.  Today, I got to doing something and my kettle really boiled.  The steam was very visible with the morning light streaming in.  Thankfully we have the sun back, I miss the sun when it hides for a couple days.  I am not sure  how people in the Pacific Northwest or Alaska do it…I need sun!

Our new favorite oatmeal is Apricot Oats.  Once I get the oats cooking, I chop up a handful of dried apricots and toss in.  The apricots plump up so lovely in the remaining cook time.  With a drizzle of honey and splash of milk, they taste wonderful.  It might be the breakfast that gets me through winter!

We purchased quite a few of these while in Vietnam 3 years ago.  The girls love how they balance on your finger or a shelf.  Who am I kidding, we all love them.  I was a bit uninspired with the camera and Forest picked on up.  They are all colors of the rainbow and some.

Switch on topics, but I have to pass along that I have lost 4 lbs. as part of the weight loss challenge I am doing.  I am excited, don’t get me wrong, but I was really hoping for at least one week with more than 2lbs gone.  Hoping this is the week and I will be stepping it up a bit to accomplish that.  Tonight was 30 min. weights, 30 min. zumba, 20 min. on a bike, and then part of the 30 Day Shred when I got home.  Only part, though, as my shins are killing me and I did punches for the jumping and kicks.  I hope to keep it up this week and be down 4lbs. this time next week!

Taking four squirmy little girls to the library is an art, a science, and frankly…not very smart.  We needed out of the house today and the library was it.  The day started out “off” and was progressing in a very “off” manner.  The library seemed to be the reset button we needed. 

The girls were good, angels almost.  They each picked up a book or two and read.  I only had to tell them one time not to get too loud or run.  I honestly felt like I could walk out of there with our heads held high and no one breathing a sigh of relief that we were gone.    That is how it is most of the time when we go to our library…most of the time.

Today was a belated surprise party for my girls.  Needless to say I was running around too much to get artsy with the photos.  I do like their smiles in this one.  It was a Nancy Drew theme and my friend (and fellow adoptive mother) did an excellent job designing the invite below.  Check out some of her other work here

23/365 Bedtime

This is my view when reading one last book to the twins tonight.  I sit on the floor while they snuggle in their “up bed” that Papaw built for them.  We love the bed, it fits their crib mattresses which are plenty big for them.  The bed has one mattress at floor level and the other just a few feet higher than that.  Not too high for such little gals, but high enough that they feel like they have a bunk like the big girls do.  It allows for so much more room to play in their tiny bedroom.  They switch every Sunday night, goodness knows the top is a highly regarded spot to be in when you are 3 years old! 

Huge swim meet today.  The girls were so excited, and then Liz got sick, really sick.  At first we thought maybe it was nerves, but now we aren’t so sure as the swim meet is long past over and she is still not herself.  She would have loved it and it makes her sad to think of the events and full day of playing with her friends that she missed.  Jane looks to be getting a best time ribbon for all of her individual events.  She tends to place about a third of the way down the sheet, so best time ribbons are important to her, shows her progress as a swimmer.   She also will be getting a gold medal for her Medley Relay team’s amazing time.  It is so fun to have watched her swimming this year and to remember last year.  My girl has come a very long way and slowly, steadily she continues to knock time off of her events…even at the end of the season when best time ribbons are a bit scarce.  Of course, when your younger sister joins the team, a bit of at-home competition is a good driving force.  Love those girls, and so thankful to have a swim team to be a part of in our little town!

22/365 taco salad

My favorite salad.  It looks so bad for you, but tastes so good and is well balanced.  We make the taco meat from our pick of spices and only sprinkle it on.  This bowl has 2-3 cups of greens with about 1/3 cup meat, 1 Tablespoon each of cheese and yogurt.  Five tortilla chips crushed over top add crunch and our fermented salsa tops it off and acts as a dressing as well.  Lots of veggies, a red meat fix, good texture mix, and best of all it just tastes wonderful!
